Dextrin and Glycerol (when added) provide additional energy sources and osmotic protection. Ammonium Chloride serves as an inorganic nitrogen source to facilitate protein synthesis and rapid cell multiplication. The naturally low pH of the medium acts as a selective barrier, discouraging the growth of many bacterial species that cannot tolerate acidic conditions, thereby allowing yeasts and molds to proliferate during the enrichment phase.
