Wort Agar is a specialized culture medium used for the cultivation, enumeration, and isolation of yeasts and molds. Due to its high content of complex carbohydrates and acidic pH, it is particularly suitable for the analysis of fungal contamination in the brewing industry, as well as in the examination of butter, syrups, and other sugary foods.

This medium mimics the composition of "wort" (the liquid extracted from the mashing process during brewing), providing a natural environment for fungal growth. The Malt Extract serves as the primary source of carbon and nitrogen, providing a high concentration of maltose and other sugars that yeasts and molds prefer. Dextrin and Glycerol act as additional carbon sources and osmotic stabilizers. Ammonium Chloride is included as an inorganic nitrogen source to support protein synthesis. The medium is naturally acidic, which helps to inhibit the growth of most bacteria while favoring the development of fungi. Bacteriological Agar provides the solid structure for colony formation.
