EE Broth is designed to recover Enterobacteriaceae that may be present in small numbers or have been sublethally injured during food processing. The medium contains Gelatin Peptone as a source of nitrogen and nutrients, while Glucose serves as the fermentable carbohydrate. The high selectivity is achieved through the inclusion of Ox Bile and Brilliant Green, which effectively inhibit Gram-positive bacteria and most non-enteric Gram-negative organisms. A robust Phosphate Buffer system (Dipotassium and Monopotassium Phosphate) is essential to maintain a stable pH, preventing the rapid acidification of the medium that could otherwise inhibit the recovery of the target organisms.
