Glucose is included as a high-concentration energy source to promote the rapid proliferation of fermentative organisms. The medium is characterized by its low pH, which is adjusted to around 4.2. This acidity serves a dual purpose: it acts as a selective agent by inhibiting the growth of most common bacterial contaminants while providing the optimal conditions for acidophilic flora, such as Alicyclobacillus species and various fungal spoilers.
