Linden Grain Medium is formulated to mimic the environment of acidic food products. It contains Yeast Extract and Ammonium Sulfate as primary sources of nitrogen, vitamins, and minerals. Glucose is included as a high-concentration energy source to promote the rapid proliferation of fermentative organisms. The medium is characterized by its low pH, which is adjusted to around 4.2. This acidity serves a dual purpose: it acts as a selective agent by inhibiting the growth of most common bacterial contaminants while providing the optimal conditions for acidophilic flora, such as Alicyclobacillus species and various fungal spoilers.
