BAT Broth is designed to support the growth of Alicyclobacillus species, which are known as "guaiacol-producing" bacteria that cause "off-flavors" in the beverage industry without gas production or visible spoilage. The medium mimics the environment of fruit juices, featuring a low pH (around 4.0) and high incubation temperatures. It contains Yeast Extract as a source of vitamins and nitrogen, and Glucose as the primary energy source. A balanced mixture of minerals (Potassium, Calcium, Magnesium) provides the essential trace elements required for the metabolic activity of these specialized organisms. Because of its high acidity, BAT Broth effectively inhibits the growth of most common contaminating bacteria that cannot survive at low pH levels.
Advantages
- Highly Targeted: Optimized specifically for the beverage industry to detect Alicyclobacillus, a major cause of quality loss in juices.
- Selective by Acidity: The low pH naturally inhibits a wide range of microbial flora, reducing the need for additional antibiotics.
- Nutrient-Rich: Provides all necessary growth factors to allow for the recovery of stressed or sublethally injured cells from processing environments.
- Industry Standard: Formulated in accordance with IFU (International Federation of Fruit Juice Producers) Method No. 12 for the detection of Alicyclobacillus.
- High Solubility: Dissolves easily, resulting in a clear medium that allows for the detection of turbidity indicative of microbial growth.
